Pucker Up for these Lucious Lemony Desserts

I pretty much love lemon everything. As a kid, I would politely say "no thank you" if a dessert had lemon in it. Thankfully, my taste buds changed. Now, I can't get enough lemon! And one of my favorite ways to satisfy my lemon fix is through desserts.

Unlike some lemon cakes, Laura Davis' Lemon Lovers Pound Cake recipe has a very lovely, light lemon flavor ... just enough to satisfy. "[This is] excellent for picnics or maybe even a potluck," says Laura. The icing glaze tops it off with the right amount of sweetness. Just perfect.

"This is a decadent, moist and incredibly flavorful recipe," is how Brittany Clapp describes her Lemon Poppy Seed Cake.  "I just LOVE the sweet and sour kick I get in my mouth." This cake is so wonderfully moist! I love lemon-flavored cakes, so we did double the amount of glaze as Brittany suggests. The results were fantastic - a must for any lemon lover!

Cheryl Redes' Mama's Lemon Custard Delight is so rich and sweet you can practically taste the love that's handed down through the generations. "This recipe has been handed down from my great-grandmother as an easy summer dessert," explains Cheryl. One bite of this custard and all will be right in your world ... it's THAT good.

"Lemon lover or not, these bars are SO melt in your mouth you'll want to eat the whole pan," says Ann McCue about her Melt in Your Mouth Lemon Bars. Ann set high expectations for these lemon gems ... and they turned every bit as good as she said! Perfectly sweet and tart, these creamy bars are a perfect after-dinner or brunch treat.

"With time as a rare ingredient in my kitchen, I use a box cake mix and add a few things of my own to make the same great taste my grandmother created, says Jane Louise of her Ice Box Lemon Drop Cake. "The lemon juice in the icing gives the cake such a 'fresh' taste." This is one of the most moist cakes I've ever had! (I attribute that to the addition of the buttermilk... along with the TLC that goes into the prep.) Perfect for a fresh finish to your day!

Lemon desserts are always so refreshing after a big meal. Heather Kelley's Triple Layer Lemon Meringue Pie was especially light and delicious. This is actually very easy to put together. The hardest part is watching it chill in the refrigerator and not digging in. The marshmallows are an unusual meringue-style topping and added a nice sweetness to the tart lemon layers. I just loved this recipe!

"It's absolutely delish on scones and muffins," says Nickole Smith-Palacios about her Easy Peasy Lemon Curd. "I use it to fill tarts, pour it warm over pound cake and even as a cake filling!" Nickole's right - this would be AMAZING served over pound cake or in a tart. I bet it would be terrific simply spooned atop some creamy vanilla or blueberry ice cream too! Put it in a cute mason jar and you have an easy gift for a lemon-loving friend.

There is something about the tart, freshness that makes lemons a perfect addition to summertime desserts. Hopefully you'll brighten up your palate with one of these flavorful recipes!
